Eating Clean: Day #2

I noticed my cravings the most throughout day 2.  I was craving sweet, salty, and solid food, but I stayed strong.  One thing that I love about this plan is the fact that food prep and clean-up is so quick, seamless, and easy!!!  I honestly could get used to the lack of cooking and brevity of my kitchen time.

Here’s My Day #2 Menu:

Breakfast: Simple Strawberry Shake

This shake was not very sweet, but it was very fresh and delicious a perfect start to my day!

Snack: Apple Green Mar-tea-ni

The apple and romaine gave this smoothie a very wholesome and fresh flavor!

Lunch: Ginger Soup

The ginger soup was delicious, but looked a lot like other soups so I decided not to feature a picture of it.  I am still trying to get used to the thick consistency of the avocado.  Hopefully it will grow on me!

Dinner: Marvelous Minestrone

This is my favorite soup so far!  It tastes JUST like Minestrone in liquid form.  Even the coolness of the soup didn’t bother me one bit because it was delicious.

I think that overall, Day 2 was the most challenging for me.  Especially when I went to visit my mom and she was making chicken enchiladas for my dad.  This is definitely a test of will, but I am enjoying the journey.

  1. It is a challenge to start this eating clean journey and still find time to write about it. I admire you for that. Congrats on Day 2! 🙂

    1. Different textures. That is a really good point. The last few days I enjoyed my sweet smoothies way more than the savory ones. I think the thick texture of the avocado weirded me out a little. So today I added more water and it made all the difference!
      Thanks for the encouragement!
